Experience the Magic of Sake, One Sip at a Time

One of the key factors that sets premium sake apart from lower quality varieties is the use of high-quality rice. Brewers carefully select the best rice grains and then polish them to remove the outer layer, leaving only the purest and most flavorful portion. This process is called "milling" or "polishing," and the percentage of rice remaining after milling is often used to describe the quality of the sake.

Another important factor in the quality of premium sake is the yeast used during fermentation. Brewers often have their own unique strains of yeast that they carefully cultivate and use to create distinct flavors and aromas in their sake.

Nihonmatsu, Fukushima is sandwiched between the Abukuma Highlands in the east and the Adatara mountain ranges in the west. At the end of winter, the snow thaws and permeates the ground, flowing through thick layers of granite as it is filtered for a long span of 40 years, eventually becoming a crystal clear water spring known as the “Mt. Adatara Groundwater Springs”. Composed of a well-balanced mixture of various minerals, it is the perfect spring water for brewing sake.
